Sorbic acid, also known as E200, is a naturally occurring organic compound that is widely used as a food preservative. It is a white crystalline powder with a slightly acrid taste and is considered safe for consumption when used within recommended limits.  

 

Description:
Sorbic acid has the chemical formula C₆H₈O₂ and belongs to the family of unsaturated fatty acids. It is naturally found in some berries and fruits, such as mountain ash berries, rowan berries, and grapes. However, most sorbic acid used commercially is produced through the condensation of malonic acid with trans-2,4-hexadienoic acid.
